Nice electrical schematic and observations! The crystal is the "heartbeat" of the microcontroller, and helps to regulate things like communication with the display, CCD, etc...
I like how clean your functional diagram looks, but I don't actually get that this device is a camera from it. More labels on your mechanical device would help a lot, too, to show what everything does.
